Bean, coriander and tomato salsa

Bean, Coriander and Tomato Salsa is a fresh, zesty salsa made with a mix of beans (such as black beans or kidney beans), ripe tomatoes, red onion, fresh coriander (cilantro), lime juice, and a touch of chili. Bursting with colour and flavor, it's perfect as a dip with tortilla chips, a topping for tacos, or a vibrant side dish for grilled meats and vegetables.

Ingredients

Ingredients (3 servings):

1 can (±400g) red kidney beans, rinsed, drained

1 large tomato, diced

3 tablespoon chopped fresh coriander

3 teaspoon lemon juice

Dried red chilli flakes (to taste)

3 tablespoon tzatziki

12 Provita’s

Instructions

Method:

Combine the kidney beans, tomato, coriander, lemon juice and chilli flakes in a medium size bowl. Season with sea salt and freshly ground black pepper.

Spread Provita’s with the tzatziki, then top with the bean mixture.

Serve.
