Zucchini Noodle Stir-Fry

Ingredients

3 medium zucchini, spiralized into noodles

1 tbsp extra-virgin olive oil

Protein (choose one)

200 g chicken breast, thinly sliced

OR 200 g salmon, cubed

OR 200 g firm tofu, cubed

Vegetables

½ red bell pepper, thinly sliced

1 cup baby spinach

1 clove garlic, finely chopped

Seasoning & Herbs

½ tsp Ceylon cinnamon

Fresh herbs (parsley, basil or coriander)

Sea salt & black pepper to taste

Juice of ½ lemon

Instructions

Cook the protein
Heat half the olive oil in a pan over medium heat. Add protein and cook until just done. Remove and set aside.

Sauté vegetables
Add remaining olive oil. Lightly sauté garlic and bell pepper for 1–2 minutes.

Add zucchini noodles
Add zoodles and toss gently for 1–2 minutes only to keep them crisp.

Combine
Return protein to the pan. Add spinach, cinnamon, salt and pepper.

Finish & serve
Remove from heat. Add lemon juice and fresh herbs. Toss gently and serve immediately.
