Cauliflower, garlic and melted cheese breadsticks

Cauliflower, Garlic, and Melted Cheese Breadsticks are savoury, crispy breadsticks made by blending cauliflower and garlic into the dough or topping, then baked until golden and topped with melted cheese. They offer a deliciously cheesy, garlicky flavor with a subtle veggie twist—perfect as a snack, appetizer, or side to soups and salads.

Ingredients (6 servings):

±275g cauliflower florets

2 eggs

150g mozzarella, grated

3 garlic cloves, crushed

1½ tablespoons finely chopped flat-leaf parsley

Instructions

Method:

Process the cauliflower in batches into rice size pieces. Place in a microwave safe bowl. Microwave, covered, on high (100%) for 7 minutes or until tender. Cool slightly.

Preheat oven to 220C/200C fan forced. Line a large baking tray with baking paper.

Combine eggs, 100g mozzarella, garlic and parsley in a large bowl.

Add cauliflower. Season and stir to combine. Spoon onto prepared tray and shape into a 17cm x 28cm rectangle, using spatula to line edges.

Bake for 25 minutes or until golden. Sprinkle with remaining mozzarella and bake for another 3-5 minutes or until cheese has melted and starts to golden.

Transfer to a board. Stand for 5 minutes.

Cut into half lengthways and into small rectangles.

Serve warm.
