Chicken breasts with feta, semi-dried tomato & basil stuffing

Chicken breasts with feta, semi-dried tomato, and basil stuffing is a flavourful and Mediterranean-inspired dish. The chicken breasts are stuffed with a savoury mixture of creamy feta cheese, tangy semi-dried tomatoes, and fresh basil, creating a rich and aromatic filling. Once stuffed, the chicken is either pan-seared or baked until golden and cooked through, with the filling melting together into a deliciously savoury, slightly tangy, and herby stuffing. The result is a juicy chicken breast with a burst of flavor in every bite—perfectly paired with a side of vegetables, couscous, or a light salad.

Cooking a gourmet-style menu needn’t be a chore with this budget-friendly and simple stuffed chicken breast idea.

Ingredients (serves 6):

225g feta, drained

3 tbs chopped marinated semi-dried tomatoes (oil reserved)

2 tbs chopped basil leaves

6 free-range chicken breasts with skin

350g Small tomatoes

Instructions

Method:

Preheat oven to 180°C.

In a small bowl, mix feta, semi-dried tomatoes and basil together. Season with salt and pepper.

Working from the narrow end of the breast, use your fingers to carefully separate skin from breast to create a pocket.

Divide feta mix among breasts, pushing mixture underneath the skin.

Place chicken skin-side up in a roasting pan. Rub with reserved oil and season.

Roast in the oven for 20 minutes, then add tomatoes to pan for a further 5 minutes or until chicken is golden and cooked, and tomatoes are softened.

Serve with spinach salad.
