Tomato & Chickpea Salad

A light and hearty salad made with juicy tomatoes, protein-rich chickpeas, red onion, and fresh herbs. Dressed with olive oil and lemon juice, it’s a refreshing and satisfying dish perfect on its own or as a side.

Ingredients

Ingredients:

1 punnet cherry tomatoes, halved

400g can chickpeas, drained

100g kalamata olives, pitted

2 teaspoons capers (optional)

1 red onion, finely sliced

Parsley, for garnish

Dressing Ingredients:

3 tablespoons olive oil

½ juice of lemon

Pinch of sugar

Salt and pepper

Instructions

Method:

Make dressing. Combine all ingredients and mix well.

Combine cherry tomatoes, chickpeas, red onion and olives.

Sprinkle with capers and parsley.

Pour over dressing.
