Capsicum boats


Halved capsicums filled with a flavourful mixture of seasoned rice, veggies, or meat, then baked until tender and slightly caramelized — a colourful and satisfying dish.

Ingredients

Ingredients (4 servings):

2 small red capsicums

1 x 185g can tuna in spring water, drained

(3/4 cup) avocado

Salt and Pepper to taste

Fresh sprouts, to serve (optional)


Instructions

Method:

Cut capsicums into quarters lengthways. Remove the seeds and membrane.

Place tuna in a bowl. Use a fork to flake. Add avocado and stir to combine.

Spice to taste. Spoon the tuna mixture into the capsicum pieces and top with a large pinch of fresh sprouts.

Decorate with flags of paper and toothpicks to serve.
