Grilled Snoek with Green Salsa
Smoky, tender grilled snoek—a South African favourite—served with a zesty green salsa made from fresh herbs, green chilies, lime, and garlic. The vibrant salsa adds a bright, tangy contrast that perfectly complements the rich, flavourful fish for a delicious and satisfying meal.

Ingredients

Ingredients:

For the green salsa:

1 clove granulated garlic

3 large sweet and sour gherkins, roughly chopped

180 ml flat-leaf parsley

1 lemon peel, grated

1 tsp Dijon mustard, (optional)

1 tbsp extra-virgin olive oil

1 dash milled pepper

For the snoek:

1 Medium Size Snoek

1 tbsp extra-virgin olive oil

60 ml lemon juice

Instructions

Method:

Roughly chop salsa ingredients

Season and set aside

Place fish on a baking tray or on the braai grid, drizzle with olive oil and season with lemon juice and milled pepper.

Cook under a preheated grill for about 10 minutes, or until cooked to your liking on the braai.

Serve fish topped with green salsa
