Grilled Chicken & Mango Greens Bowl

Ingredients

For the Grilled Chicken

2 free-range chicken breasts (±150 g each)

1 tbsp extra-virgin olive oil

Juice of ½ lemon

1 clove garlic, finely grated

½ tsp smoked paprika

½ tsp dried oregano or thyme

Sea salt & cracked black pepper

For the Greens Bowl

4 cups mixed leafy greens (rocket, baby spinach, or cos lettuce)

½ ripe mango, thinly sliced (keep portions modest)

1 ripe avocado, sliced

¼ red onion, very thinly sliced

1 tbsp pumpkin or sunflower seeds (optional crunch)

Lime-Olive Oil Dressing

1½ tbsp extra-virgin olive oil

Juice of 1 lime (or lemon)

1 tsp Dijon mustard

Pinch sea salt

Freshly ground black pepper

Instructions

Method
1. Marinate the Chicken

Mix olive oil, lemon juice, garlic, spices, salt, and pepper.
Coat chicken well and rest for 10 minutes (or up to 2 hours refrigerated).

2. Grill

Heat a grill pan or braai to medium-high.
Grill chicken 5–6 minutes per side until golden and cooked through.
Rest for 3 minutes, then slice.

3. Prepare the Bowl

In a large bowl:

Add greens

Layer mango slices (do not overdo)

Add avocado and onion

Sprinkle seeds

4. Dress & Assemble

Whisk dressing ingredients.
Toss lightly with greens.
Top with warm sliced chicken and serve immediately.
