Gluten-Free Banana Oat Pancakes (Low-GI)

1 ripe banana

2 eggs

½ cup rolled oats (blended into oat flour)

½ tsp cinnamon

¼ tsp baking powder

Pinch of sea salt

1 tsp coconut oil or butter for frying

Optional add-ins (low-GI friendly):

1 tbsp ground flaxseed or chia seeds

1 scoop unflavoured protein powder

Instructions

How to make

Blend oats into a fine flour.

Add banana, eggs, cinnamon, baking powder, and salt.

Blend until smooth.

Heat a pan on medium-low and lightly grease.

Spoon small pancakes into the pan.

Cook 2–3 minutes per side until golden.
