Low-GI Spinach & Avocado Egg Muffins (Gluten-Free, Diabetic-Friendly)

Ingredients

6 large eggs

½ cup baby spinach, finely chopped

½ small red onion, finely diced

½ cup cherry tomatoes, halved

¼ cup feta cheese (optional)

1 small avocado, diced (added after baking to keep it fresh + low-GI)

1 tbsp olive oil

Salt & pepper to taste

½ tsp paprika or mixed herbs (optional)

Instructions

Preheat the oven to 180°C and grease a muffin tray with olive oil or line with silicone cups.

In a mixing bowl, whisk the eggs, salt, pepper, and herbs.

Add in the spinach, onion, and cherry tomatoes. Mix gently.

Divide the mixture evenly into 6 muffin cups.

Sprinkle a little feta on each (optional).

Bake for 18–20 minutes until the muffins are firm and lightly golden.

Allow to cool slightly, then top each muffin with fresh diced avocado before serving.
