Healthy Summer Breakfast

Healthy Summer Breakfast: A light and refreshing start to the day with options like Greek yogurt topped with fresh berries, chia seeds, and a drizzle of honey, or a smoothie bowl with blended fruits and granola.

Ingredients

Ingredients (4 servings):

NOTE: Use whatever fruit is in season

¾ cup toasted muesli

200g mixed nuts & seeds with cranberries

2 tablespoons honey

4 slices watermelon

1 cup strawberries

1 cup blueberries

1 cup raspberries

1 cup plain yoghurt

½ melon, peeled, sliced

2 mangoes, halved and peeled

2 oranges, peeled, sliced

2 kiwifruit, peeled, sliced

Instructions

Method:

Divide fruit among serving bowls. Top with a dollop of yoghurt and sprinkle over nut crumble.

Preheat oven to 180C or 160C fan. Line a baking tray with baking paper.

Place muesli, nuts, seeds and honey in a bowl and toss to combine.

Spread onto prepared tray and bake for 10 mins until golden.

Set aside to cool.
