Uric Acid–Friendly Anti-Inflammatory Detox Salad

Ingredients

(1 serving)
• ½ cup cooked quinoa
• 1 cup baby spinach or kale
• ½ cup cucumber (sliced)
• ½ cup celery (chopped)
• ½ cup cherry tomatoes
• ½ avocado (sliced)
• 1 tbsp chia or flax seeds
• Juice of ½ a lemon
• 1 tsp apple cider vinegar
• 1 tbsp olive oil
• Pinch of Himalayan/sea salt & black pepper

Instructions

1. Cook quinoa and allow it to cool.
2. Combine spinach/kale, cucumber, celery, tomatoes and avocado in a bowl.
3. Mix lemon juice, olive oil, ACV, salt & pepper to form a dressing.
4. Add quinoa and seeds to the bowl.
5. Toss gently and enjoy.
