Ingredients:
- 1 punnet cherry tomatoes, halved
- 400g can chickpeas, drained
- 100g kalamata olives, pitted
- 2 teaspoons capers (optional)
- 1 red onion, finely sliced
- Parsley, for garnish
Dressing Ingredients:
- 3 tablespoons olive oil
- ½ juice of lemon
- Pinch of sugar
- Salt and pepper
Method:
- Make dressing. Combine all ingredients and mix well.
- Combine cherry tomatoes, chickpeas, red onion and olives.
- Sprinkle with capers and parsley.
- Pour over dressing.
