Tomato & chickpea salad

Ingredients:

  • 1 punnet cherry tomatoes, halved
  • 400g can chickpeas, drained
  • 100g kalamata olives, pitted
  • 2 teaspoons capers (optional)
  • 1 red onion, finely sliced
  • Parsley, for garnish

Dressing Ingredients:

  • 3 tablespoons olive oil
  • ½ juice of lemon
  • Pinch of sugar
  • Salt and pepper

 

Method:

  1. Make dressing. Combine all ingredients and mix well.
  2. Combine cherry tomatoes, chickpeas, red onion and olives.
  3. Sprinkle with capers and parsley.
  4. Pour over dressing.
