Ingredients (serves 6):
- 175g baby salad leaves
- 2 medium avocados, chopped
- 4 green onions, thinly sliced
- 2 large English cucumbers, halved, thinly sliced
- ¼ cup lemon juice
- ¼ cup olive oil
Method:
- Combine salad leaves, avocado, onion and cucumber in a bowl.
- Place lemon juice and oil in a screw-top jar.
- Season with salt.
