Summer tomato salad

Ingredients (4 servings):

  • 6 tomatoes, cored and cut into wedges
  • ¼ small red onion, very thinly sliced
  • 3 tbsp olive oil
  • Salt and ground black pepper, to taste
  • 80-100g feta, crumbled
  • 20 mint or basil leaves, torn

 

Method:

  1. Place tomatoes and onion in a serving bowl, drizzle with olive oil, season with salt and pepper and toss to combine.
  2. Scatter feta and mint or basil over the top and serve.
