Ingredients (4 servings):
- 6 tomatoes, cored and cut into wedges
- ¼ small red onion, very thinly sliced
- 3 tbsp olive oil
- Salt and ground black pepper, to taste
- 80-100g feta, crumbled
- 20 mint or basil leaves, torn
Method:
- Place tomatoes and onion in a serving bowl, drizzle with olive oil, season with salt and pepper and toss to combine.
- Scatter feta and mint or basil over the top and serve.
