- 165g boneless, skinless chicken breast
- 1 tbsp fresh coriander leaves, chopped
- 1/4 tsp dried ginger
- 1 clove minced garlic
- Juice of ½ lime
- 1 cup (165g) cooked spinach
- 1 tsp light butter
- Black pepper to taste
1. Mix together the coriander leaves, ginger, garlic and lime and rub onto chicken breast.
2. Wrap chicken in foil and bake in oven preheated to 180 degrees for about 25 minutes.
3. Mix the butter and pepper into the spinach and serve with the chicken.
