Green salad with mango


  • 3 English cucumbers
  • 2 small red onions, thinly sliced
  • 2 medium mangoes, peeled, cut into matchsticks
  • 400g mixed salad leaves
  • 1/3 cup olive oil
  • ¼ cup lemon juice
  • 2 teaspoons wholegrain mustard



  1. Using a vegetable peeler, cut thin ribbons from cucumbers.
  2. Place cucumber in a large bowl. Add onion, mango and salad leaves.
  3. Whisk oil, lemon juice and mustard in a small bowl until combined.
  4. Add to salad. Toss gently to combine.
  5. Serve.
