Tomato and Green Bean Beef Mince

Ingredients (4 servings):

  • 1 tablespoon vegetable oil
  • 1 large brown onion, cut into wedges
  • 2 garlic cloves, crushed
  • 500g beef mince
  • 2 teaspoons ground cumin
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 2 dried bay leaves
  • 400g can crushed tomatoes
  • 300g green beans, trimmed, cut into 3cm lengths
  • 2 tablespoons coriander leaves
  • 200ml Greek-style yoghurt
  • Lemon wedges

 

Method:

  1. Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 2 mins or until starting to brown.
  2. Add garlic. Cook, stirring, for 30 secs or until fragrant.
  3. Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until cooked through.
  4. Add spices and bay leaves and cook for 30 seconds or until fragrant.
  5. Add tomato and bring to a simmer. Cook for 5 mins or until thickened slightly.
  6. Add green beans and cook, covered, for 3 mins or until beans are tender. Serve with lemon wedges.
