Ingredients (4 servings):
- 1 tablespoon vegetable oil
- 1 large brown onion, cut into wedges
- 2 garlic cloves, crushed
- 500g beef mince
- 2 teaspoons ground cumin
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 2 dried bay leaves
- 400g can crushed tomatoes
- 300g green beans, trimmed, cut into 3cm lengths
- 2 tablespoons coriander leaves
- 200ml Greek-style yoghurt
- Lemon wedges
Method:
- Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 2 mins or until starting to brown.
- Add garlic. Cook, stirring, for 30 secs or until fragrant.
- Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until cooked through.
- Add spices and bay leaves and cook for 30 seconds or until fragrant.
- Add tomato and bring to a simmer. Cook for 5 mins or until thickened slightly.
- Add green beans and cook, covered, for 3 mins or until beans are tender. Serve with lemon wedges.
